We’ve started this blog to keep you up to date with all things Yatai.  www.yatai.co.uk is still online, if a little “lite” on content, but you can still book a table through the site by visiting the reservations page.

Yatai has a new home at the Bauhaus Hotel!

Yatai is pleased to announce that we will finally be open at our new home ‘Yatai at the Bauhaus, 56-60 Langstane Place, Aberdeen, AB11 6EN on Saturday 21st of November. Its been a long time coming and we are all, as I’m sure you are, very excited. We can finally say good bye to our famous slippery floor, the cold nights and the restricted booking times. Its all go from here on in! Cocktails, fine nihonshu (sake), a flaming Japanese robata grill, a fantastic private kotatsu dinning area and great views of the kitchen where ever you sit.

Our reservations page is also back online if you want to be one of the first to book a table!

Under regulation (EC) 853/2004, annex III, Section VIII, Chapter III, D, 1. all unprocessed fishery products, intended to be eaten raw or almost raw (e.g. sashimi or sushi) require to have been frozen to -20C. Freezing of such fish may take place at any point in the supply chain prior to sale to the final consumer. Food businesses may choose to freeze the fish or the final product, including when the fish forms only part of the final product.

The effect of this on Yatai is that we can no longer serve local fish at its freshest. To do so will be breaking the law and Yatai could be closed down for good by Environmental Health.

Yatai will not take fresh local fish and freeze it then defrost it and serve it to you. It would breach everything that Yatai stands for.

Unfortunately, we have had no choice but to discontinue the service of the following: Salmon, Sea Bream, Sea Bass, Squid and turbot as sushi or sashimi as of the 21st of July. It is with great regret that we have to do this and I am sure you will be very disappointed also.

Yatai intends to fight this legislation by every means possible.

EUによる条例<(EC)853/2004, annex III, Section VIII, Chapter III, D, 1>の施行にともない、生あるいは生に近い状態で消費される未加工の水産物(例:刺身、すし)は、マイナス20度以下で冷凍処理することが義務づけられることとなりました。この条例により、水産物の捕獲から店頭に出されるまでのいずれかの時点において冷凍処理がなされることになります。また飲食販売店が魚類や切り身を冷凍処理することもできますが、たとえ生の魚が料理のほんの一部に含まれる場合であっても冷凍処理をしなければなりません。この条例により、当店Yataiでは地元近海で獲れる新鮮な魚を刺身やお鮨(すし)として提供できなりました。冷凍処理をせずに刺身やお鮨(すし)を店頭に出すことは、たとえそれが近海で獲れた新鮮な魚であっても条例に反することであり、環境衛生を重視した現行条例によって営業権を剥奪されることになります。アバディーン近海で獲れた新鮮な魚を冷凍処理し、解凍してからお客様にお出しすることは、当店Yataiの営業理念とは意を異にすると判断した上で、地元近海で獲れるサケ、タイ、スズキ、イカ、ヒラメの刺身とお鮨(すし)を当店メニューから2009年7月21日付をもって廃止いたしました。誠に遺憾ではありますが、皆様にもご理解をいただけることを願っております。当店Yataiとしましては、できる限りの手を尽くして条例<(EC)853/2004, annex III, Section VIII, Chapter III, D, 1>に対し抗議する所存であります。どうぞご理解のうえ、嘆願書へご署名くださることをここにお願いいたします。http://www.ipetitions.com/petition/frozenfishforsushi/

Yatai has Wagyu!

14df0_Wagyu_DSC6301For all those who love beef!  Yatai has recently sourced a supplier of the world famous Wagyu beef.  A very special breed that orginated from Japan.  Massaged daily, fed beer and played classical music this cow lives the dream.  You will never experience a more relaxed, tasty steak.

An extract from the Sea Grant website.

“Nematodes rarely cause health problems because they are uncommon in fish fillets and normal cooking easily destroys them. In most cases, swallowing a live nematode is harmless. The nematode passes through the intestine without causing problems.
In rare cases, swallowing a live nematode larva can cause severe gastric upset called anisakiasis. This happens when the nematode attaches to or penetrates the intestinal lining. Nematodes do not find humans to be suitable hosts and will not live longer than 7-10 days in human digestive tracts.”

What is a Yatai?

A yatai (屋台) is a small, mobile food stall in Japan typically selling ramen or other hot food. The name literally means “shop stand.”

The stall is set up in the early evening on pedestrian walkways and removed late at night or in the early morning hours before commuters begin to fill the streets. Menus are usually limited; Japanese cuisine (often of Chinese origin) is of course most common, but Western cuisine yatai are not unknown. Beer, sake and shōchū are usually available. A business person might relax with colleagues over dinner and drinks at a yatai on their way home from work.
